La Antigua visit : St. Lawrence University

Last week, we had pleasure to welcome pupils of the St. Lawrence University (New York, United States). In the framework of our #Quesoturismo project, we use to organize visits of our factory. Furthermore, we propose to bring our visitors to the farms of the region in order to milk our sheeps which produce the milk that we use to make our cheese. This is a funny way to teach the entire process : from the farm to the best sheep cheese of the world 😉 Of course, every visit finish with a tasting of our cheeses.

This girls discovered all our secrets. The purpose of this visit was to discover the Spanish Traditional Gastronomy and we can say that La Antigua is the good definition of this expression. As you already know, we come from a shepherd family. We represent the 5th generation. This girls learned that we use raw milk from Castellana and Churras ewes to make our DOP Vellón de Fuentesaúco.

Tasting la antigua

This visit was not just a moment of sharing but also of joy. Because we think that it is not only important to share our knowledge. Indeed, it is better to enjoy a good moment with a cheese platter. And we have tasted everything : our creamy cheese Caprichos de la Pastora, our cheese with truffle, rosemary, paprika, aged, grapes and of course… our cheese flowers.
We have also tried our wine which comes from Toro region because we think that it is more than important to work with local producers. We have to make known our land to Spain and to the world.

To conclude this beautiful day, this girls received a diploma.
