Cheese refined with rosemary is one of the most traditional in the Spanish gastronomy. This cheese made with raw sheep milk is matured in a cellar for a minimum of 12 months. Rosemary is a plant rich in active ingredients and has numerous medicinal properties, such as an antiseptic, depurative, stomach stimulant and diuretic.
Rosemary applied to the rind of La Antigua Aged cheese penetrates little by little, letting the product acquire all the flavour of this well-known aromatic herb.
