The VELLÓN DE FUENTESAÚCO MINI cheese, handcrafted with raw sheep’s milk from the Churra and Castellana breeds, pure and native breeds of the province, with recognized dairy aptitude, and very remarkable quality levels.
Esparto strap marked on its natural rind, bathed during maturation with olive oil. Hard rind, ivory, well marked and defined. The paste is very buttery, ivory white and can have small eyes, spread evenly throughout the cut.
It has genuine aromas and flavours, typical of raw sheep’s milk, well developed and persistent on the palate. You can appreciate its taste and olfatory characteristics in which we can remember lactic flavours (fresh milk, curd, butter …), vegetables (cut grass, hay …) due to the traditional grazing system.
