September, a month full of beginnings, of new resolutions. Until now, it has been linked to the return to school, the arrival of the vacations or the rush to make the most of the last days at the beach. In this month, we return to our routine, rested, eager to learn new things, but, above all, to enjoy ourselves. And what do you need to enjoy it? Cheese! That’s why this September we have a cheese board for everyone.

And when we say everyone, we mean everyone. Because this board can be chosen in two ways: lactose and lactose-free.

The
lactose intolerance
is the inability to digest the sugar contained in milk (lactose). This develops into symptoms such as abdominal pain, nausea or vomiting.

We will tell you a little more about each of the cheeses that we have included in this delicious board.

We start with a soft cheese, the Candidum Sheep’s Cheese made with pasteurized sheep’s milk and whose production process has naturally included penicilium candidum mold.

It is cured for 2 months and has a creamy flavor with small acidic touches.

 

This board also includes a classic, a Cured Cheese. Made with raw sheep’s milk from which it acquires all its flavor. This cheese is available with and without lactose.

It is obtained after a maturation of between 4 and 6 months bathed in olive oil. In addition, its bark is natural.

It also contains a Tender Cheese, which stands out for its mild flavor that retains hints of sheep’s milk. It is matured between 7 and 35 days and, being a cheese made with pasteurized milk, it is totally suitable for pregnant women. This cheese also has a natural rind, which can be edible.

Moving to the other end of the spectrum, the table includes an Añejo Cheese. It stands out for its intense flavor, ideal for lovers of strong flavors. It is a cheese made in a natural way, with raw sheep’s milk and is kept in maturation for more than 12 months.

Finally, our star of the month: Sheep Cheese with Anise and Chia. It is a cheese made with pasteurized sheep’s milk, with low curing (approximately 35 days). In its production, organic anise and chia seeds have been included, so it is considered a very healthy cheese.
