Summum: Know where you come from, so you know where you are going.

The Alimentaria 2022 trade fair in Barcelona has come to an end. Four intense days in which, after the pandemic, we have returned, among exhibitors, attendees, chefs, speakers and the entire organization in general, a breath of fresh air, strength and hope to the sector.

From Hall 1 in the Premium Zone, the Quesería La Antigua team has once again given one hundred percent. Believe us if we tell you that, for this fair, it takes months of organization, meetings, direct communication with customers in order to show attendees the best of us, which at Alimentaria has its own name: Summum.

Summum is the result of a passion matured over 5 generations. We value the quality of local milk, the know-how of our livestock company and the recovery of the taste of the origin.

Summum is a masterpiece that La Antigua produces with care in the town of Fuentesaúco, in the province of Zamora, exclusively with sheep’s milk from local herds, which the dairy farmers take to the cheese factory every day after milking. In Antigua, therefore, we use exclusively fresh, pure, natural, intact and living sheep’s milk, and that is how we get the real cheese.

And around Summum this year our stand was a tribute to the old dairies. Surely many of you reading this article, go back in time and your memory smiles at the memory of those walks to the dairy, with pitcher or milk jug in hand.

Summum is a reminder of the dairyman, alive in the memory of many, a symbol of a slow, delicate and sacrificed work. Very early in the morning, starting milking at 4 a.m., the milkman would load the fresh liters of milk into the cart at the dairies to deliver them to his customers, friends or neighbors, with whom he often established a friendly relationship and became a member of the family. A profession in full contact with the natural and animal environment, which required quality, passion and kind treatment.

Summum is our origin and our tradition, a cheese with great flavor, aroma and history. Two years of essence, of giving value to a pampered maturation in the cellar, to life in the countryside, to our shepherds and dairy farmers. Summum is to bring the raw material, milk, to immortality. A unique experience for all the senses and a journey into the past through every bite. Quality raised to the highest level.
