Quesería La Antigua
. A wide range of raw sheep’s milk cheeses that, with these distinctions, receive a new endorsement to the trajectory of this family cheese factory.
In the 2022 edition of the World Cheese Awards held in Newport (Wales, United Kingdom), two La Antigua cheeses have won awards . World Cheese Awards is considered the most recognized international cheese competition on the continent. Organized by The Guild of Fine Food, the World Cheese Awards have brought together cheese professionals for decades.
El Vellón de Fuentesaúco Añejo
wins this award. Covered by the Zamorano Cheese denomination of origin, it has obtained multiple international recognitions to which this new bronze medal is added.
Made in an artisanal way, this aged cheese is made with raw sheep’s milk from the Churra and Castellana breeds, pure and native breeds of the province, of recognized dairy aptitude, with very remarkable quality levels, under the Protected Designation of Origin Queso Zamorano. With natural rind of brown color and well defined and marked pleita, bathed in Extra Virgin Olive Oil during maturation. The paste is firm and compact, yellowish ivory in color, and may have small eyes, evenly distributed throughout the cut.
Zamorano cheese is characterized by its genuine aromas and flavors, typical of raw sheep’s milk, well developed and persistent on the palate. In addition, olfactory and gustatory characteristics can be appreciated, with hints of sheep’s milk, cooked butter or nuts, due to the traditional grazing system that feeds our sheep and their long maturation in cellars.
Another of the references that has won an award at this year’s Wolrd Cheese Awards is our latest innovation La Antigua with paprika flakes made with raw sheep’s milk and Pimentón de la Vera paprika flakes that give it a smoky, slightly spicy and long-lasting taste in the mouth, pressed paste in which we can see those paprika flakes and natural rind. With an image that still maintains the essence of La Antigua but in a renewed form and a maturation period of between 9 and 12 months.
Awards that endorse the ongoing commitment to innovation of this family business that has become a benchmark in the production of cheese, both for its extensive range and its production volume. In order to meet market needs, the company’s production capacity has been doubled with investments that allow it to maintain an important labor and social fabric, with a strong commitment to the rural environment.
